Carrot pancakes

Remember last week when I posted about our new juicer? Well, John and I decided to try the carrot pancakes and carrot bread recipes using the left over carrot pulp! It was a major success! The pancakes were awesome. We added 1.5 cups of carrot pulp to bisquick, then put in a little nutmeg and cinnamon, and voila! image-17

Then we served them with cream cheese and maple syrup! They were quite savory. I have a feeling we’ll be consuming a lot of carrots in the near future!




The bread was quite tasty too! Basically it was a whole wheat bread recipe with 1.5 cups of carrot pulp added. Yummy, AND healthy! image-20
