Today, for Energy Bar Monday, I’m posting my experience making Crispy Kale Bars from the book “Power Hungry: The Ultimate Energy Bar Cookbook”. These bars some from the “activity bar” section of the book. I chose this recipe for the week because I’m recently OBSESSED with kale!
Here’s the ingredients:
-For the syrup that’s supposed to hold everything together, put the following ingredients in a sauce pan on low heat: nut butter, cane sugar, glucose syrup, sea salt. Cook till melted and bubbly.
Finally, mix everything together, and then add almond extract. Then, immediately put into a pan that has been prepped with baking foil (AND SPRAY), smoosh down really well, then refrigerate for at least 1 hour.
I put it in the refrigerator just like this. I thought I did everything right (aside from slightly burning the sauce, but it wasn’t that bad!). I took it out of the fridge after an hour, took it out of the pan, went to cut it and………crumble crumble crumble! My granola bars are now just granola! I had to just put them in a tupperware container, because they are NOT in bar form! So sad!!!
