Energy Bar Mondays: Nick Bars

This week for my Energy Bar Mondays, I made Nick Bars from the Power Hungry book! These bars are “knock-offs of Cliff Bars”.  I chose to make the Peanut Butter Crunch version. I had a fairly good experience with the recipe, and I think these are my favorite bars yet!

The main ingredient in these bars were dates. I was a little concerned because I’ve never had dates before, but it seems they taste much like raisins!

To start with, I had to soak the dates in warm water, then dry them off and chop them in the blender! IMG_1739

Next, I combined chopped nuts, quinoa, and oats together.

These bars are not baked, so I had to melt together natural peanut butter and honey together for the coating that would hold the bars together.

Then I combined it with the nut mixture and dates and mixed it all together. I tried to get it all covered with the coating, but I wasn’t positive I got it all.

I laid it all in a 9×9 pan and smooshed it all down. Then, I put it in the fridge for an hour to cook.

When I cut them up and took out the first bar, I thought they were perfect!

Buuuuut, then I looked at the bottom of the pan. Ooops! a lot of quinoa seeds got left out! IMG_1741Oh well, the bars tasted AWESOME! I definitely recommend this recipe highly in the Power Hungry book!
