This weekend I bought a cookbook for homemade energy bars! This book is awesome! I love granola bars to snack on, but I’ve been trying to eat more healthy this year, so I figured this is a great way to do it. Last night, I decided to try out one of the recipes. I didn’t feel like going grocery shopping, so I picked a recipe that I already had the ingredients for-Carrot Cake Action Bars!
The main ingredients in these bars were oats, brown sugar, coconut oil, honey, eggs, raisins, and carrots! I already had a ton of carrot pulp saved from making carrot juice with our juicer, so I was able to use that! After mixing everything together, I put it in a 9 inch pan layered with tin foil and baked it for 35 minutes! They turned out great! Very moist and chewy; kind of like a cliff bar except not hard and crunchy. I’m excited to try out more recipes soon!
