This week for Energy Bar Mondays, I made Paleo Power Pucks! This recipe came from the ‘Endurance Bars’ section of the Power Hungry book. I’m not a Paleo “follower”, but this recipe did sound really good. I opted to make the chocolate version. Here’s the recipe:
Whisk together: egg whites, maple syrup, unsweetened cocoa powder, salt.
Mix in: chopped nuts (I used a mixture of walnuts and almonds), seeds, chopped dried fruit (I just used raisins).
Then you just put the “batter” in muffin tins and bake 16 minutes!
This recipe was SUPER easy, and for once, they turned out perfect! Oh, and they taste AWESOME! My favorite recipe yet!!
I’m actually kind of sad this recipe only made 10 “pucks”, but since I’m making a new recipe every week, it’s probably a good thing they don’t make more!
Nutrients per puck: 113 calories, 8.6 g Fat, 65mg Sodium, 7.3g Carbs, 4.0g Protein
