Weekend for new things

This weekend was a good one for me to try new things! This was my first open weekend I’ve had in a while, so I took advantage of it! On Saturday, after my long run and swim, I got a new cookbook! Some of you may have read about my efforts to eat better foods this year. Because of that, I tried making homemade energy bites to eat in place of store bought energy bars. I loved these so much that when I heard about this energy bar cookbook from a fellow blogger, I just had to buy it! It’s called Power Hungry: The ultimate energy bar cookbook. image-24 I didn’t get a change to make any of them yet (I’m waiting until my current batch of energy bites are gone), but I already know what ones I’m going to try first! They’re called ‘moonbeam bars’ which are supposed to compare to the store bought luna bars. I love the luna bars, so I can’t wait to try this recipe!! image-25 Along with a new cook book, I also indulged in purchasing a new foam roller! I’ve needed a new one for quite some time, but haven’t gotten around to buying one. As you can see from this picture, my old foam roller has been well loved! Note the dent in it :)   image-28 My new one though, you can see is quite sturdy, and it’s a killer! I think it will work much better than my old one. We will have a love-hate relationship :) image-26My last new thing this weekend was also food related :) I had some students over for dinner, and so I decided to try making a new dessert for them. I wanted to make ‘no-bake’ cookies, but I know they are horribly unhealthy (a standard recipe has a whole stick of butter in it!). So, I decided to make them slightly more healthy by using dark chocolate cocoa instead of milk chocolate cocoa, and replacing the stick of butter with 1/2 cup coconut oil! They turned out AMAZING! There were no leftovers, so I think that meant they were a hit! I’m definitely going to try them again next time I need to make a dessert for something. image-27 What did you all do this weekend?
